
French Onion Tartlets

I have decided to do something easy, light but absolutely delicious this month for the Wine pairing. A while back we had a Cabernet sauvignon blind tasting and I made these little French tart-lets and it complimented the Cabernet so well and I would like to share this recipe with you.
Ingredients
- 1 Roll of puff pastry
- 4 onions finely sliced
- 2 Tablespoons fresh thyme leaves
- 1 cup of fresh cream
- 2 eggs
- Salt and Pepper
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 200c.
- Start of by melting 50g butter in a frying pan add a little oil to stop it from burning. Once you’ve got the pan nice and hot, tip in the onions, mix them thoroughly with the hot butter, and let them cook on high for about six to ten minutes until very lightly browned at the edges.
- Take them off the heat and add the thyme leaves and salt and pepper.
- Let the onions cool down.
- For the pastry, line 6 tart cases with the pastry or 1 big one.
- For the filling, whisk the cream and the eggs together and season well.
- Fill your pastries with the onions and pour over the cream mixture, sprinkle with the Parmesan cheese and bake them for 20 minutes or until golden brown.
Notes
- Serve it with a fresh garden salad or as a starter. Lanzerac Cabernet Sauvignon compliments this dish very well.
