Bobotie

Bobotie
Bobotie is one of those dishes that brings comfort to me and this recipe is so full of flavour I really enjoy the cinnamon in it. #comfortfood
Ingredients
  1. 1 Kg Mince
  2. Olive oil for frying
  3. 1 large carrot peeled and grated
  4. 2 Onions chopped
  5. 2 teaspoons garlic
  6. 10 ml each of ground ginger, ground coriander, turmeric, cinnamon, curry powder
  7. Salt and pepper
  8. 30 ml apricot jam
  9. 1/2 cup ground almonds
  10. One thick slice of bread soaked in milk
  11. 2 cups of buttermilk
  12. 4 eggs
  13. 4 bay leaves
Instructions
  1. Fry the onion, garlic , spices.
  2. Add the mince fry until brown.
  3. Add the apricot jam, almonds and bread, making sure to mix it in well you shouldn't be able to see big pieces of bread.
  4. Season well with salt and pepper.
  5. Lightly whisk the buttermilk ,eggs and season well.
  6. Spoon the mince into a oven dish and pour the milk and egg mixture over and poke the bay leaves in the mince.
  7. Bake at 180c for 45 minute or until golden and the egg mixture firm.
  8. Lightly whisk together
Notes
  1. You can easily halve this recipe but ,it is better the next day so I always make the full recipe for lunch the next day!
